Top quality Damascus steel
The Damascus steel used in the production of SHUN knives is made by layering metal alloys on top of each other and forming a single alloy from them. During this process, the characteristics of the different metal layers create a shimmering pattern that can be seen on the blade. SHUN knives have 32 layers of metal on both sides of the steel cutting core.
SHUN craftsmen hand-sharpen the blade of each knife to achieve the ideal sharpness.
Production
"KAI" knives are distinguished from other kitchen knives by their excellent design and extremely sharp blades. The knives are made according to the experience of Seki sword makers. Each knife is made by experienced specialists. The manufacturing process consists of at least 100 manual steps. The traditional methods of making Japanese daggers and swords inspire the craftsmen working in KAI factories every day. The combination of gunmaking traditions, the latest technologies and excellent quality materials guarantees that every knife produced is a real functional work of art.
